Project description:

Recently, bilberries have been the subject of increasing public interest as a functional food or nutraceuticals. These berries contain biologically active compounds – anthocyanins, known as natural antioxidants, which are able to bind free radicals in the human body and slow down the aging process. However, the main disadvantage of anthocyanins is their instability due to various external factors. Therefore, the most important task for solving this problem is to create stable delivery systems. The aim of this project is to encapsulate anthocyanins by a combination of liposomes and lyophilization or spray drying. Using these methods, the active compounds can be encapsulated at the micro or nano level. By choosing the right encapsulation conditions for anthocyanins, it is possible to preserve their biologically active structure, efficiency and to improve the bioavailability of anthocyanins in the body. During the project, composition containing anthocyanins will be obtained, the properties and their potential application in nutraceuticals will be evaluate. After analyzing the research results, a final report will be prepared.

Project is funded by EU Structural Funds according to the 2014–2020 Operational Programme for the European Union Funds’ Investments priority “Development of scientific competence of researchers, other researchers, students through practical scientific activities” under Measure No. 09.3.3-LMT-K-712.


Project results:

During the project activities, the student will get acquainted with interdisciplinary and interdisciplinary research, deepen theoretical and practical knowledge. The student will gain practical experience working with new research methods and equipment. The project will significantly contribute to the qualification development of II study stage of student.
